Kevin McCarthy describes the small batch of Pinot Noir fruit he secured from Farnsworth Vineyard in Mildura as, “beautifully ripe and in impeccable condition.” The fruit was mostly destemmed, with a small portion of bunches retained to bump up the tannin and, importantly, lend a balancing, savoury flavour profile. After fermentation, the wine was sent to seasoned barriques and puncheons for maturation with a high level of solids. It was bottled unfined and unfiltered in July 2024.
