STYLE - IMPERIAL PASTrY STOUT

The original IVY LEAGUE was an imperial pastry stout that we aged in Heaven Hill Bourbon barrels & conditioned on Maple syrup. This time for IVY LEAGUE - THE GOSPEL EDITION we took a more refined approach. We contacted one of our favourite Melbourne Whiskey Producers "THE GOSPEL" & we were able to get our hands on some of their freshly emptied Straight Rye Whiskey barrels. The aroma's in the Brewery on the the day we filled these barrels were so incredible we knew we were onto something special here. 

Fast Track 9 months and the time had come. Instead of conditioning this beer on any other adjuncts we let the base imperial pastry stout soak in the barrels to see what we could get.  Upon tasting of each barrel the decision was made it needs nothing else. 

The beer we believe is the perfect showcase of a Barrel aged pastry stout.

Big, Bold, & Rich with plenty of whiskey barrel character & a beautiful warmth.
