A very special collab we brewed with our pals over in Canada 2 Crows Brewing to celebrate our 1st birthday back in July. Brewed with a base of Pilsner malt, wheat & a small percentage of rye sourced from the legends at Voyager Craft Malt which we ran through a low oxygen multi temperature mash schedule.
We used a mix of German Saaz and one of our fav Aussie hops from Hop Products Australia Eclipse® in the whirlpool.
With 2 Crows head brewer and our good mate Jeremy Taylor live on FaceTime for the brewday, the name, 10,000 miles is the distance between our two breweries. Jimmy & Jeremy used to work together at Stewart Brewing in Edinburgh around 8 years ago.
We sourced several strains of American origin Brettonomyces yeasts for this beer, which we grew over a period of time to a healthy pitchable amount. It then spent 62 days in stainless for a full 100% Brett fermentation with a very light dryhop of Eclipse in there towards the end.
We bottled this beer in these beautiful screen printed, green 375ml sparkling bottles complete with cork & cage allowing it to naturally carbonate in there for 5 months until it fully matured for release day.
This is an extremely delicate and well balanced beer.
Expect a hefty amount of carbonation with good amounts of funk, notes of breadcrusts, underripe pineapple & mandarin. With an earthy body and a light mineralality, it’s refreshing and really showcases the wild side of Brettanomyces and what it can do on its own.
