100% Semillon. Destemmed ensuring whole berry remained and left in the press for 2 days on skins. Grapes were then pressed long and slow and juice transferred to stainless steel and kept below 20 degrees celsius for ferment. Matured in stainless for 6 months before being transffered to old French oak for a further 8 months. Underwent partial malolactic fermentation during the aging period. Unfined and unfiltered with small addition of sulphur the only addition made. 10.5%
Tasting notes: Nicely developed this one after its longer than usual maturation in old oak. Ripe citrus and pear with notes of fresh herbs and a salty oxy feel. Honeyed palate with crisp acidity and just a touch of textural tannin on the mid palate. Best enjoyed with a slab of Gruyere.
