The Coolship Ale is the pinnacle of wild brewing - a true representation of where and when it was brewed, and who it was brewed by.

When Jeffrey Stuffings - founder of renowned wild brewery Jester King in Texas - visited La Sirène back in 2018, we knew we had to use the Coolship to make something truly wild.

Freshly-brewed wort was chilled overnight in our Coolship by nothing more than the cool winter breeze. It is this use of the outside air that introduces local indigenous microflora to allow 100% spontaneous fermentation. After aging in Burgundian oak puncheons for over five years, "Coolship with Jeff" is finally ready for public release. 

The result is nothing short of spectacular. Coolship with Jeff is incredibly well-rounded with a beautifully complex acidity and a lingering air of fruitiness.

This is a beer to sit and contemplate amongst good company.
