Sparkling made the ancestral way: wild-fermented in bottle. This is a crisp and fresh Pet Nat without cold-stabilisation or filtration.

It’s a blend of Sangiovese and Tempranillo, sourced from the Mt Camel Ranges in Heathcote, to give it a round, approachable structure. We also added a little Zig Zag Rd. Estate Cabernet Sauvignon rose, to bring a freshness and acidity that helps balance the wine and bring a beautiful mouth feel.

We used a basket press at to press, to give a ruby pink colour, and to add texture through oxygen interaction.
