This single-site Chenin Blanc was organically farmed by us in the Trappers Gully vineyard in Mount Barker. Fruit was hand-picked and basket-pressed to a combination of old oak barriques and slightly newer demi-muids, where it was left to ferment wild. Being such a transparent variety, I feel Chenin provides a very honest view on the vintage that was. In this case, the warmer season has created a fuller-flavoured wine, which is balanced by the natural acidity and pithy tannins. This wine was bottled unfined and unfiltered, with only a small amount of SO2.
