Aromatically hoppy in youth, once these rather transient characters subside after a few months, the ale gently sours over time in bottle. This gradual and controlled increase in acidity refreshes and revitalises the ale as it ages, ensuring that whenever you choose to enjoy a bottle, it will always be “cleansing”!
