The Riesling is from two vineyards, one farmed organically by us on granite soils at 300m altitude in the Porongurup subregion, and the other owned by a small certified organic grower in the nearby coastal town of Albany. The fruit was hand-picked, foot-stomped and basket-pressed before being left to ferment spontaneously in mature oak barriques and stainless steel. Elevage was on full lees for 10 months (untopped) with some vessels developing flor yeast. We feel this bottling has captured a variety well-suited to the region in its purest form. It was lightly filtered before bottling, with the only addition a small amount of SO2
