“Without" DIPA is day zero dry hopped with a slightly larger amount of Nelson Sauvin at the start of fermentation for a solid dose of 4MMP; something for our yeast to express and play with. The tank is then chilled down in temperature and a single shot of Citra®, Mosaic®, Simcoe®, and Nelson Sauvin hops are added. Inert gases are used to mix everything into suspension before being brought to sub-zero temperatures. Although we find the pure hop character more muted, the interaction of these hops with our house yeast seems to provide a great balance to the beer.
